Ever wondered where does the "soup" in our dumplings come from?

Not as simple as adding water to the dumpling filling!

Step 1: Slow cook some soup with pork skin. This can take up to 8 hours. Step 2: Refrigerate the pork skin soup for 24 hours, turning it into pork skin jelly. Step 3: Crush the pork skin jelly. Step 4: Add the crushed pork skin jelly pieces into the dumpling filling.

When the dumpling is cooked, the pork skin jelly pieces melt, giving the dumpling the "soup effect".
